π Ingredients
For the Crust:
1 1/4 cups all-purpose flour
1/2 cup cold butter (cubed)
2β3 tbsp cold water
1/4 tsp salt
For the Lemon Filling:
1 cup sugar
2 tbsp all-purpose flour
2 tbsp cornstarch
1/4 tsp salt
1 1/2 cups water
2 lemons (juice + zest)
2 tbsp butter
4 egg yolks (beaten)
For the Meringue:
4 egg whites
1/2 cup sugar
1/2 tsp vanilla extract
π¨βπ³ Instructions:
1. Prepare the Crust:
Mix flour and salt, then add butter and rub until crumbly.
Add cold water gradually and form a dough.
Roll it out and place in a pie dish.
Bake at 350Β°F (175Β°C) for 10β12 minutes until lightly golden.
2. Make the Lemon Filling:
In a saucepan, mix sugar, flour, cornstarch, and salt.
Add water, lemon juice, and zest. Cook on medium heat until thick.
Stir in butter.
Slowly add egg yolks while stirring. Cook 2 more minutes.
Pour into the baked crust.
3. Make the Meringue:
Beat egg whites until soft peaks form.
Gradually add sugar and vanilla, beat until stiff peaks.
Spread over the lemon filling, sealing the edges.
4. Bake:
Bake for 10β15 minutes until the top is golden brown.
