Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt

Directions:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, sugar, egg, baking soda, vanilla and salt. Stir until the dough is smooth and well combined.
  3. Scoop tablespoon-sized portions of dough and roll into balls. Place them on the baking sheet about 2 inches apart.
  4. Using a fork, gently press down on each ball to create a crisscross pattern.
  5. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft.
  6. Remove cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
