Today, I’m sharing a recipe that’s close to my heart β simple, satisfying, and bursting with flavor. “Spanish Beans & Eggs” is a wonderful way to bring a taste of sunshine to your table, perfect for breakfast, lunch, or a light dinner. Itβs packed with goodness and so easy to prepare!βοΈ

Here’s what you’ll need:
1 tablespoon olive oil
- 1 small onion, finely chopped (about 1/2 cup)
- 1 clove garlic, minced
- 1 (15-ounce) can cannellini beans (or other white beans like Great Northern), rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 teaspoon smoked paprika (this gives it that lovely Spanish touch!)
- Salt and freshly ground black pepper to taste
- 2 large eggs
- Fresh parsley, chopped, for garnish (optional)
- Crusty bread for serving (optional, but lovely for dipping!)
Let’s get cooking! SautΓ© the Aromatics: Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until it’s softened and translucent, about 5-7 minutes.
- Add the Garlic: Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Combine & Simmer: Add the rinsed cannellini beans, diced tomatoes (with their juice), and smoked paprika to the skillet. Stir everything together gently.
- Season & Bubble: Season with salt and pepper to your liking. Bring the mixture to a gentle simmer, then reduce the heat to low and let it cook for about 5 minutes, allowing the flavors to meld together.
- Make Wells for the Eggs: Using a spoon, create two small “wells” or indentations in the bean mixture, spaced apart.
- Add the Eggs: Carefully crack one egg into each well.
- Cook the Eggs: Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness. If you like your yolks runny for dipping, keep a close eye on them!
- Serve & Enjoy: Carefully scoop each serving into a bowl. Garnish with fresh parsley if you like. Serve immediately with some crusty bread on the side for soaking up all those delicious flavors.
